espresso machine worries?
i am looking into purchasing an espresso machine and i am wondering a few things that i have learned while doing some light research. can i use my regular coffee grinder for espresso beans? the entire tamping process is very confusing to me as well!!! can someone help! i had no idea espresso was so complicated and i even work in barista a bit at my job!
Espresso isn't really complicated but it requires taking time to get it right.

As to the grinder; if it's a higher end espresso machine you need a better grinder since cheaper one won't grind fine or even enough. Espresso requires a very even grind. Otherwise water will tunnel through the grinds and over extract to make a bitter brew. To get even results in tamping use a bathroom scale to measure your pressure; once you've done it enough you should be able to exert the same amount of pressure without the scale. If you have the plastic tamper that comes with most espresso machines replace it with a quality metal one (you will taste the difference).
